For the best value, consider buying dry yeast in a 16-ounce 'block' instead of in 3-pack envelopes. Once opened, store the yeast package in a ziplock bag in the freezer. A single package usually lasts about seven months since I only use 4 tablespoons of yeast per recipe. It's fascinating to observe the solid, vacuum-packed block of yeast transform into a soft package of granulated yeast as soon as it's opened. Additionally, it's worth noting that plain, dry baker's yeast is not considered 'chometz gomur' and can be sold even by individuals who don't normally sell 'real' chometz. It's always best to confirm this with your Posek. If you need to purchase a new block of yeast closer to Pesach, pour off the required amount for the few weeks leading up to Pesach and store the remainder in a separate, clean, sealed bag to be sold.
