This tip comes from my dear daughter-in-law, an extraordinary cook and baker. When using a 5-pound bag of pre-sifted flour in a recipe that calls for 5 pounds of flour, there's no need to use a measuring cup; you can pour straight from the bag to the mixer. However, if you're using half whole wheat flour or a different-sized bag, you need to measure your flour cup by cup. Avoid scooping the flour directly from the bag.
Scooping compresses the flour, likely resulting in more than a cup of flour in your measuring cup. Instead, pour the flour into the cup. While this method can be messier, it will give you a more accurate measurement.
On the topic of measuring cups: if you often need to adjust your recipe by adding extra flour or water, consider checking your measuring cup against one that you know holds an accurate cup measurement. Some cheaper measuring cups can be off by a tablespoon or more, which is enough to throw your recipe off. Investing in a quality set of measuring cups and spoons is worthwhile for consistent and accurate measurements. (This tip deserves its own number!)
